The Algarve salad is a light salad, often used to accompany the main course. Due to the growing climate of the Algarve, green tomatos may be used as they have a superb flavour.
3 tomatoes (green or red)
1 green pepper
1 grated carrot
Olive oil/red wine vinegar mix in equal quantities as dressing
1 teaspoon salt
Optionally add tuna or fresh goats cheese.
