Molotofe

Molotofe is a traditional Algarve pudding, consisting of baked egg-whites coated with caramel.

Ingredients:

Molotofe 10 egg whites
10 tablespoons sugar
Pre-heat oven to 180-200.

Whisk the egg whites until fluffy, add the sugar a spoonful at a time mixing with the whisk. Place the mixture in a round cake tray (forma de bolo in Portuguese) which has been coated with caramel and cook in oven for 10 minutes. Turn off the oven and leave in oven for further 30 minutes. After the 30 minutes, place immediately on a plate and allow to cool.

Tip

Make your caramel using sugar without water. Don't open the oven during cooking. Forma de Bolo
